Creamy Caramel Apple Cheesecake Dip with Toffee Bits

A quick and easy no-bake dessert dip combining creamy cheesecake, rich caramel, crunchy toffee bits, and fresh apple slices. Perfect for parties, holidays, or any occasion.

  • 1 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 1/4 cup heavy cream
  • 1 cup caramel sauce
  • 1 pinch sea salt (optional)
  • 1/2 cup toffee bits
  • 23 medium apples (Honeycrisp, Fuji, or Granny Smith), sliced for dipping

Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge about 30 minutes before starting, or microwave for 10-15 seconds until soft but not melted.
  2. Whip the cream cheese: In a mixing bowl, beat softened cream cheese with an electric mixer on medium speed for about 2 minutes until smooth and fluffy. Scrape down sides halfway through.
  3. Add sugar and vanilla: With mixer on low, gradually add powdered sugar (about 1/4 cup at a time), then add vanilla extract. Mix until fully combined, about 30 seconds.
  4. Lighten with cream: Pour in heavy cream and beat on medium-high for another minute until light, airy, and pale. Mixture should hold soft peaks.
  5. Spread the base: Using a spatula, spread cheesecake mixture evenly into a serving dish. Smooth the top.
  6. Add the caramel: Warm caramel sauce slightly (about 15 seconds in microwave) if thick. Pour over cheesecake layer and spread gently with a spatula, keeping distinct layers.
  7. Top with toffee: Sprinkle toffee bits evenly over caramel layer. Add a light sprinkle of sea salt if using salted caramel.
  8. Chill: Cover dish with plastic wrap and refrigerate for at least 1 hour (2 hours is better).
  9. Prepare apples: Just before serving, slice apples. To prevent browning, toss with a little lemon juice or slice right before serving. Leave skin on for color and texture.
  10. Serve: Arrange apple slices around the dip or on a separate platter. Also serve with graham crackers, pretzels, or shortbread cookies for dipping.

Notes

For best results, chill at least 1 hour. The dip tastes even better on day two. To toast toffee bits for extra crunch, spread on a baking sheet and bake at 350°F for 3-4 minutes, watching carefully. For a dairy-free version, use dairy-free cream cheese and coconut cream instead of heavy cream. For a gluten-free version, use certified gluten-free toffee bits.
