  • 1 medium-large butternut squash, peeled and cubed into 1-inch pieces
  • 1/2 cup unsalted butter, divided
  • 1 large bunch fresh sage leaves, washed and patted dry
  • 1 block (8 oz) cream cheese, softened
  • 1 cup freshly grated Parmesan cheese
  • 2 cups shredded low-moisture mozzarella cheese
  • 1 box (12-16 oz) lasagna noodles
  • 3 cloves garlic, minced
  • 1/2 teaspoon nutmeg
  • Salt and black pepper to taste
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven to 400Β°F (200Β°C). Toss cubed squash with 1 tablespoon melted butter, salt, and pepper. Roast on a baking sheet for 25-30 minutes until tender and caramelized. Let cool completely.
  2. While squash roasts, melt 2 tablespoons butter in a skillet over medium heat. Fry sage leaves for 1-2 minutes until crisp. Remove sage and reserve the sage-infused butter.
  3. In a food processor, blend cooled squash, cream cheese, Parmesan, garlic, nutmeg, heavy cream, and reserved sage butter until smooth. Season with salt and pepper.
  4. Boil lasagna noodles in salted water until 1-2 minutes before al dente. Drain, rinse with cold water, and lay flat on a towel.
  5. Preheat oven to 375Β°F (190Β°C). Spread a thin layer of sauce in a 9×13 inch baking dish. Layer noodles, remaining sauce, and mozzarella. Repeat layers, ending with sauce and mozzarella on top.
  6. Cover with foil and bake for 20 minutes. Remove foil and bake for another 5-10 minutes until bubbly and golden. Rest for 15 minutes before serving.

Notes

Ensure squash is cooled before blending to prevent the sauce from becoming too hot. Do not overcook noodles as they will finish cooking in the oven. Let the lasagna rest for 15 minutes before cutting to ensure clean slices. For a gluten-free version, use gluten-free noodles. For a vegan version, substitute dairy products with plant-based alternatives.
