  • 1 pound smoked kielbasa, sliced into half-moons
  • 1 medium head green cabbage, shredded
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken or vegetable broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 2 medium carrots, peeled and diced
  • 2 tablespoons butter or olive oil
  • Salt and black pepper to taste
  • Fresh parsley or bay leaf for garnish

Instructions

  1. Dice the onion and carrots into small, uniform pieces. Mince the garlic.
  2. Slice the smoked kielbasa into half-moon slices, about ΒΌ-inch thick.
  3. Remove outer leaves from the cabbage, cut into quarters, remove the core, and shred thinly.
  4. Heat butter or olive oil in a large stockpot over medium heat. Add onions and carrots, sautΓ©ing for 3-4 minutes until softened.
  5. Add garlic and cook for 30 seconds until fragrant.
  6. Add sliced kielbasa to the pot. Let sit for a minute to brown, then stir for 2 minutes to release smoked oils.
  7. Toss in the shredded cabbage, pour in the broth, and add bay leaves and dried thyme. Stir to combine.
  8. Bring to a boil, then reduce heat to low. Cover and simmer for 10-15 minutes until cabbage is tender but not mushy.
  9. Remove bay leaves. Taste and season with salt and black pepper as needed (keep in mind the sausage is salty).
  10. Serve hot with crusty bread, garnished with fresh parsley.

Notes

Do not overcook the cabbage; check at the 10-minute mark to ensure it remains tender-crisp. Toast the sausage first to build flavor. Use low-sodium broth to control salt levels. The soup tastes even better the next day as flavors meld. Can be frozen for up to 3 months.
