A warm mini pumpkin filled with cheese, cured meats, nuts, and dried fruit—perfect for a cozy date night in. This easy, no-fuss charcuterie board comes together in under 15 minutes and feels like a celebration.

  • 1 mini sugar pumpkin (about 12 pounds)
  • 46 ounces cheese selection (brie, aged cheddar, goat cheese)
  • 46 slices prosciutto or salami
  • 810 small crackers or crispbreads
  • ¼ cup toasted pecans or walnuts
  • ¼ cup dried cranberries, figs, or apricots
  • A handful of fresh grapes or apple slices
  • 12 tablespoons honey or maple syrup (optional)
  • A few sprigs fresh rosemary or thyme
  • Pinch of flaky sea salt and freshly cracked black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Wash the mini sugar pumpkin and pat dry. Using a sharp knife, cut off the top about 1-2 inches from the stem at a slight angle so the top can sit back on like a lid.
  3. Use a sturdy spoon to scoop out all the seeds and stringy pulp from inside the pumpkin. Be careful not to scrape too hard.
  4. Place the hollowed pumpkin (with the lid on) on a parchment-lined baking sheet. Bake at 350°F (175°C) for 8-10 minutes, until warm and slightly tender but still holding its shape.
  5. Remove from the oven and let cool for 5 minutes. Place on a serving board or plate.
  6. Assemble the board: Place cheese inside the pumpkin (brie at the bottom, cheddar slices and goat cheese crumbles around it). Add prosciutto or salami, folding into ribbons or rosettes. Fill gaps with crackers, nuts, dried fruit, and fresh grapes. Drizzle brie with honey if using.
  7. Garnish with fresh rosemary or thyme sprigs. Sprinkle flaky sea salt over cheese and crack black pepper. Place pumpkin lid at an angle or set aside.

Notes

Don’t overbake the pumpkin—8-10 minutes is enough. Use a sugar pumpkin, not a carving pumpkin. Let cheese come to room temperature before serving for best flavor. You can hollow out the pumpkin a day ahead and store in the fridge.
