  • 1 medium apple (about 6 ounces, 170g), peeled and finely diced
  • 1 teaspoon cinnamon
  • 2 tablespoons granulated sugar mixed with 1 teaspoon cinnamon (for topping)
  • 1 teaspoon lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat softened butter with granulated sugar and brown sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg and vanilla extract until fully combined and smooth.
  5. Gradually add the flour mixture to the butter mixture, mixing just until incorporated. Avoid overmixing.
  6. In a small bowl, toss diced apple with lemon juice and cinnamon to keep fresh and flavorful.
