  • 2 cups whole milk (or oat milk, canned coconut milk for dairy-free)
  • 1 cup strong brewed coffee (or 2 shots of espresso)
  • 2 tablespoons packed brown sugar (or maple syrup)
  • 1 teaspoon vanilla extract (pure)
  • 1½ teaspoons pumpkin spice blend (see notes)
  • Pinch of salt
  • Whipped cream (optional, for topping)
  • Extra pumpkin spice or cinnamon (for garnish)

Instructions

  1. Brew your coffee or espresso. While it’s brewing, measure out 1 cup of strong coffee or pull 2 shots of espresso. Set it aside.
  2. Mix the pumpkin spice blend. In a small bowl, combine 1 teaspoon cinnamon, ½ teaspoon ginger, ¼ teaspoon nutmeg, ¼ teaspoon cloves, and a tiny pinch of allspice. Stir with a fork.
  3. Combine milk and pumpkin in a saucepan. Pour 2 cups of milk into the saucepan and add ½ cup of pumpkin puree. Whisk vigorously to break up the pumpkin until mostly smooth.
  4. Add sweetener and spices. Stir in 2 tablespoons of packed brown sugar, 1½ teaspoons of your pumpkin spice blend, and a pinch of salt. Whisk again to combine.
  5. Heat the mixture over medium heat. Stir frequently with the whisk, scraping the bottom to prevent scorching. Heat until hot but not boiling—small bubbles around the edges are your cue. This takes about 4 to 5 minutes.
  6. Add vanilla and coffee. Remove the saucepan from heat. Stir in 1 teaspoon of vanilla extract, then slowly pour in the brewed coffee or espresso. Whisk gently until everything is combined and smooth.
  7. Taste and adjust. Add more sweetness or spice if desired.
  8. Pour into mugs. Divide the latte between two 12-ounce mugs.
  9. Top with whipped cream and a dusting of spice. Add a generous dollop of whipped cream, then sprinkle a little cinnamon or pumpkin spice on top. Serve immediately.

Notes

Don’t use pumpkin pie filling—it’s already sweetened and spiced. For a dairy-free version, use oat milk or full-fat canned coconut milk. The pumpkin-milk base can be made the night before and reheated gently. Store leftover latte (without whipped cream) in the fridge for up to 2 days; reheat on the stovetop, not in the microwave.
