Cozy Crockpot Turkey Chili: 3-Bean Easy Dinner

A thick, warm, and comforting slow-cooker chili made with lean ground turkey and three types of beans. This low-effort, high-reward recipe is perfect for busy weeknights and meal prep.

  • 1.5 lbs ground turkey
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) pinto beans, rinsed and drained
  • 1 large red bell pepper, diced
  • 1 cup corn (frozen or canned)
  • 2 cans (14.5 oz each) fire-roasted diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1 cup salsa (medium or hot)
  • 1 cup beef or chicken broth (low-sodium)
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp cayenne pepper (optional)
  • Salt and black pepper to taste
  • Shredded cheddar cheese for serving
  • Sour cream or Greek yogurt for serving
  • Fresh cilantro, chopped for serving
  • Lime wedges for serving

Instructions

  1. Dice the onion and red bell pepper into small pieces. Mince the garlic. Rinse the corn if using canned. Set aside.
  2. Heat a large skillet over medium-high heat. Add ground turkey and break it up with a wooden spoon. Cook until no longer pink (5-7 minutes). Drain excess fat if necessary. (Optional: Skip this step and add raw turkey directly to the crockpot).
  3. Transfer the turkey to a 6-quart slow cooker. Add the diced onions, peppers, garlic, and rinsed beans.
  4. Pour in the diced tomatoes (with juices), tomato paste, salsa, and broth.
  5. Sprinkle chili powder, cumin, smoked paprika, dried oregano, cayenne pepper, black pepper, and salt over the mixture. Stir to combine.
  6. Cover and cook on Low for 6-8 hours or on High for 3-4 hours.
  7. Check consistency. If too watery, cook uncovered on High for 30 minutes. Taste and adjust seasoning as needed.
  8. Stir well and serve hot with shredded cheese, sour cream or Greek yogurt, fresh cilantro, and lime wedges.

Notes

For a vegetarian version, omit the turkey and double the beans, using vegetable broth. For extra heat, add jalapeΓ±os or use hot salsa. The chili tastes better the next day as flavors meld. Can be frozen for up to 3 months.
