  • 2 cups all-purpose flour
  • 3 large eggs, room temperature
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 1 medium onion, diced
  • 3 carrots, peeled and diced
  • 3 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 cups cooked chicken, shredded or cubed
  • 8 cups chicken broth, low-sodium
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
  • 1 bay leaf
  • 1/2 cup heavy cream (optional)
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, whisk together 2 cups of flour and 1 teaspoon of salt. Make a well in the center.
  2. Crack 3 eggs into the well and add 1 tablespoon of olive oil. Use a fork to gently beat the eggs and gradually pull in flour from the sides.
  3. Turn the shaggy dough out onto a floured surface and knead for 5-7 minutes until smooth and elastic. Wrap in plastic wrap and let rest at room temperature for 20 minutes.
  4. Place a Dutch oven over medium heat and melt 2 tablespoons of butter.
  5. SautΓ© diced onion, carrots, and celery for 5-7 minutes until softened. Stir in minced garlic and cook for 1 minute until fragrant.
  6. Add the cooked chicken, dried thyme, and bay leaf. Cook for 2 minutes to toast the herbs.
  7. Pour in 8 cups of chicken broth. Bring to a boil, then reduce heat to low and simmer uncovered for 10 minutes.
  8. Dust a counter with flour and roll the rested dough out as thin as possible (about 1/16 inch thick).
  9. Fold the dough loosely and cut into strips about 1/4 inch wide. Toss with a little flour to prevent sticking.
  10. Boil the noodles in a separate pot of salted water for 2-3 minutes until al dente, then drain.
  11. Stir the cooked noodles into the soup. If using, stir in 1/2 cup of heavy cream and heat through for 2 minutes.
  12. Remove the bay leaf. Taste and add salt and pepper as needed before serving.

Notes

Letting the dough rest is crucial to prevent shrinking. Roll the dough thin for better texture. Cook noodles separately to prevent them from becoming mushy in the soup. Store soup without noodles in the freezer for up to 3 months.
