  • ¼ teaspoon salt
  • 1 cup (90g) rolled oats (old-fashioned)
  • ¾ cup (96g) all-purpose flour
  • ½ cup (100g) light brown sugar, packed
  • ¼ cup (50g) granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (113g or 1 stick) unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat your oven to 350°F (175°C). Position a rack in the center of the oven.
  2. Peel, core, and slice apples into ¼-inch thick pieces. You should have about 6 cups of sliced apples.
  3. In a large bowl, toss the sliced apples with ¼ cup granulated sugar, ¼ cup brown sugar, 2 tablespoons flour, lemon juice, 1 teaspoon cinnamon, ¼ teaspoon nutmeg, and ¼ teaspoon salt. Let sit for 5 minutes.
  4. In a separate bowl, whisk together rolled oats, ¾ cup flour, ½ cup brown sugar, ¼ cup granulated sugar, ½ teaspoon cinnamon, and ¼ teaspoon salt. Add cold butter cubes and cut in using a pastry cutter, two forks, or your fingertips until the mixture resembles coarse meal with some pea-sized butter pieces remaining.
  5. Pour the apple mixture into an ungreased 8×8-inch baking dish and spread evenly. Sprinkle the oat crumble topping evenly over the apples without pressing down.
  6. Place the dish on a baking sheet and bake for 35-40 minutes, until the topping is golden brown and the apple juices are bubbling around the edges. If topping browns too quickly after 25 minutes, tent loosely with foil.
  7. Let the crisp rest on a wire rack for at least 10-15 minutes before serving.
