This cozy classic apple crisp features a perfect blend of tart and sweet apples with a crunchy oat crumble topping. It’s an easy, crowd-pleasing dessert that comes together in under an hour with simple pantry ingredients.

Ingredients

Scale
  • 6 medium apples (about 2.5 pounds), mix of Granny Smith and Honeycrisp
  • 1/3 cup granulated sugar
  • 2 tablespoons light brown sugar, packed
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (1 stick), melted
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish with butter or non-stick spray.
  2. Peel apples if desired (peel about half for texture), core, and slice into 1/4-inch thick slices.
  3. In a large bowl, combine sliced apples with granulated sugar, brown sugar, lemon juice, cornstarch, cinnamon, nutmeg, and salt. Toss to coat evenly. Let sit for 5 minutes.
  4. Transfer apple mixture to a small saucepan or large skillet. Cook over medium heat for 3-4 minutes, stirring gently, until liquid thickens slightly and apples soften just a bit. Pour into prepared baking dish and spread evenly.
  5. In a medium bowl, combine rolled oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Stir with a fork to break up lumps. Pour melted butter over dry ingredients and stir until evenly moistened (mixture should look like wet sand with some clumps). Fold in nuts if using.
  6. Sprinkle oat crumble topping evenly over apples, breaking up large chunks but keeping some clumps for texture.
  7. Place dish on a baking sheet and bake for 35-40 minutes, until topping is deep golden brown and filling is bubbling around edges. If topping browns too quickly after 25 minutes, tent loosely with foil.
  8. Let cool on a wire rack for at least 15 minutes before serving. Serve warm, preferably with vanilla ice cream.

Notes

For best texture, use a mix of apple varieties. Don’t skip the stovetop step—it prevents a watery filling. Let the crisp rest for 15-20 minutes after baking to allow the filling to set. For a gluten-free version, use a 1:1 gluten-free baking flour blend and certified gluten-free oats. For a vegan version, use melted coconut oil or vegan butter.
