  • ¾ cup granulated sugar
  • 1 large egg, room temperature

  • ¼ cup granulated sugar (for coating)
  • 1 tsp ground cinnamon (for coating)
  • Butter, melted (for brushing)

Instructions

  1. Pour 2 cups of apple cider into a medium saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low. Simmer for 20-30 minutes until reduced to approximately ½ cup and syrupy. Remove from heat and let cool completely.
  2. Preheat oven to 350°F (175°C). Generously grease a donut pan with non-stick spray or butter.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.
  4. In a large bowl, using a hand mixer or stand mixer, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  5. Beat in the egg and vanilla extract until combined. Add the cooled, reduced apple cider and mix until just incorporated.
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  7. Fold in the sour cream or yogurt gently until no streaks remain.
  8. Spoon the batter into the prepared donut pan, filling each cavity about ¾ full.
  9. Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean. The donuts should be golden brown.
  10. Let the donuts cool in the pan for 5 minutes, then transfer to a wire rack to cool for another 5 minutes. While still warm, brush each donut lightly with melted butter and roll in the cinnamon sugar mixture until fully coated.

Reducing the apple cider is crucial for flavor concentration; aim for a syrupy consistency that coats the back of a spoon. Do not overmix the batter to avoid dense donuts. Ingredients should be at room temperature. If you don’t have a donut pan, you can use a muffin tin and cut out the centers after baking. Store in an airtight container at room temperature for up to 2 days or freeze for up to 1 month.
