  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/4 teaspoon salt
  • 1 1/2 cups (360ml) milk (dairy or plant-based)
  • 1/4 cup (60ml) maple syrup
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 2 medium apples (peeled and diced, about 1 1/2 cups / 225g)
  • 1/2 cup (60g) chopped walnuts or pecans (optional)
  • Unsalted butter or coconut oil (for greasing muffin tin)

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Grease your muffin tin with unsalted butter or coconut oil to prevent sticking.
  2. Peel, core, and dice 2 medium apples into small, bite-sized pieces. Optionally toss with a sprinkle of cinnamon.
  3. In a large bowl, combine 2 cups (180g) rolled oats, 1 teaspoon baking powder, 2 teaspoons ground cinnamon, 1/4 teaspoon ground nutmeg, and 1/4 teaspoon salt. Stir until evenly distributed.
  4. In a separate bowl, whisk together 1 1/2 cups (360ml) milk, 1/4 cup (60ml) maple syrup, 1 large egg, and 1 teaspoon vanilla extract until smooth and combined.
  5. Pour the wet mixture into the dry ingredients. Stir gently until just combined. Fold in the diced apples and optional 1/2 cup (60g) chopped nuts.
  6. Divide the oatmeal mixture evenly among the 12 muffin cups, filling each about 3/4 full.
  7. Bake for 30–35 minutes until cups are set and lightly golden on top. A toothpick inserted should come out mostly clean with a few moist crumbs.
  8. Let the oatmeal cups cool in the tin for 10 minutes, then transfer to a wire rack to cool completely or serve warm.

Notes

Use rolled oats for best texture; avoid instant oats to prevent mushiness. Grease muffin tin well to prevent sticking. Tent with foil if browning too quickly. For vegan version, replace egg with flax egg and use plant-based milk. Batter can rest 10 minutes before baking to hydrate oats. Store leftovers in airtight container in fridge up to 5 days or freeze up to 3 months.
