Copycat Starbucks Pumpkin Cream Cold Brew

A homemade version of the popular Starbucks drink featuring a velvety pumpkin spice cream foam atop cold brew coffee, ready in under five minutes.

Ingredients

  • 1 cup heavy whipping cream (chilled)
  • 2 tablespoons pumpkin puree (100% pure, not pie filling)
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1–2 tablespoons granulated sugar (adjust to taste)
  • 1–2 tablespoons half-and-half or whole milk
  • 1 cup cold brew coffee
  • Ice cubes
  • Optional: splash of milk or oat milk for the coffee base

Instructions

  1. Chill the heavy cream and pumpkin puree in the refrigerator for about 10 minutes before starting.
  2. Add the heavy cream, pumpkin puree, pumpkin pie spice, vanilla extract, sugar, and a splash of half-and-half to a blender.
  3. Blend on low speed to combine, then increase to medium-high. Blend for 30-45 seconds until the mixture is thick, fluffy, and pourable but holds its shape.
  4. Check consistency; add more cream if too thin or milk if too thick. Taste and adjust sweetness if needed.
  5. Fill a tall glass with ice cubes.
  6. Pour the cold brew coffee over the ice, leaving about an inch of space at the top.
  7. Gently pour the pumpkin cream foam over the back of a spoon onto the surface of the coffee to create distinct layers.
  8. Optional: Garnish with a sprinkle of pumpkin pie spice or a drizzle of syrup.
  9. Serve immediately with a straw.

Notes

Ensure all ingredients are cold to help the foam hold its shape. Do not use pumpkin pie filling as it contains added sugars and spices. For a dairy-free version, use chilled full-fat coconut cream. The foam is best made fresh but can be stored in the fridge for up to 24 hours.
