  • 2 tablespoons dark roast ground coffee
  • 3 tablespoons packed brown sugar
  • 2 tablespoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon liquid smoke (optional)
  • 1 cup BBQ sauce
  • 2 tablespoons honey or maple syrup

Instructions

  1. Trim excess fat from the brisket, leaving about 1/4 inch for flavor and moisture. Pat dry with paper towels.
  2. In a bowl, mix together the coffee grounds, brown sugar, smoked paprika, garlic powder, onion powder, chili powder, salt, and black pepper until well combined.
  3. Rub the spice mixture all over the brisket, pressing it in so it sticks well. Let it sit at room temperature for 15 to 30 minutes if time allows.
  4. Add a teaspoon of liquid smoke to the bottom of the slow cooker (if using). Place the rubbed brisket fat side up in the slow cooker. Cover and cook on low for 8 to 10 hours, or until the meat is tender and easily pierced with a fork.
  5. Transfer the brisket to a cutting board and cut into 1-inch cubes. Toss the cubes with BBQ sauce and honey or maple syrup.
  6. Return the cubes to the slow cooker or spread on a baking sheet and broil for 5 to 7 minutes to caramelize the sauce and crisp the edges.

Notes

If the brisket looks dry during cooking, add a splash of beef broth or water. Letting the rub sit on the brisket before cooking helps flavors penetrate better. Broiling at the end adds a crispy caramelized crust but can be skipped if short on time. Use freshly ground coffee for best aroma and flavor. Liquid smoke is optional but recommended for smoky depth.
