  • 0.5 lbs ground pork
  • 1 medium yellow onion, finely diced
  • 2–3 cloves garlic, minced
  • 2 large eggs, room temperature
  • 0.5 cup whole milk
  • 0.5 cup old-fashioned oats
  • 1 tablespoon dried parsley
  • 0.5 cup ketchup (plus extra for glaze)
  • 0.25 cup packed brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon yellow mustard
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a 9×5 inch loaf pan with parchment paper and lightly grease.
  3. Sauté diced onion and minced garlic in butter until soft and translucent (approx. 5 minutes). Alternatively, mince finely and use raw.
  4. In a small bowl, whisk together milk, eggs, 0.5 cup ketchup, Worcestershire sauce, mustard, and dried parsley.
  5. In a large mixing bowl, combine ground beef and pork. Add sautéed onions and garlic.
  6. Pour the wet mixture over the meat. Sprinkle in oats, salt, and pepper.
  7. Mix gently with hands until just combined. Do not overmix to avoid a dense texture.
  8. Press the mixture into the prepared loaf pan, smoothing the top.
  9. In a small bowl, whisk together brown sugar, remaining ketchup, and apple cider vinegar to make the glaze.
  10. Pour half of the glaze over the raw meatloaf.
  11. Bake for 45 minutes.
  12. Remove from oven and pour remaining glaze over the top.
  13. Return to oven and bake for another 15-20 minutes, or until internal temperature reaches 160°F (71°C).
  14. Remove from oven and let rest in the pan for at least 10 minutes before slicing.

Notes

Do not overmix the meat to prevent a tough texture. Use a thermometer to ensure the meat reaches 160°F. Letting the meatloaf rest for 10 minutes is crucial to retain juices. For a gluten-free version, swap oats for gluten-free rolled oats or almond flour. For dairy-free, use plant-based milk.
