A simple, intimate charcuterie board for two that comes together in under 15 minutes. Perfect for date nights, anniversaries, or any evening when you want to feel special without the fuss.

Ingredients

  • Brie cheese, 4 ounces, at room temperature
  • Aged cheddar, 3 ounces, sliced thin
  • Goat cheese log, 2 ounces, sliced into rounds
  • Manchego, 3 ounces, cut into small wedges
  • Prosciutto, 4 ounces, thinly sliced
  • Salami, 3 ounces, sliced into thin rounds
  • Soppressata, 2 ounces, sliced
  • Fresh grapes, 1 cup, red or green
  • Dried apricots, 1/2 cup
  • Honey, 2 tablespoons, for drizzling
  • Mixed olives, 1/2 cup
  • Almonds, 1/4 cup, roasted and salted
  • Fig jam, 2 tablespoons
  • Crackers, 1 cup, assorted varieties
  • Baguette slices, 1/2 baguette, sliced thin and lightly toasted
  • Fresh rosemary sprigs, for garnish (optional)

Instructions

  1. Take the cheeses out of the refrigerator about 30 minutes before you plan to serve.
  2. Prepare your board. Place your wooden board or platter on a clean surface. Start by positioning the small bowls for olives, honey, and fig jam in a triangle pattern.
  3. Add the cheeses. Place the brie whole on the board. Arrange the cheddar slices in a fan shape, the goat cheese rounds in a small cluster, and the manchego wedges opposite the brie.
  4. Layer the meats. Fold the prosciutto slices into loose ribbons or bundles. Arrange the salami rounds in an overlapping row, and do the same with the soppressata.
  5. Add the fruits and nuts. Scatter the grapes in small clusters around the board. Tuck the dried apricots between the cheeses. Place the almonds in a small pile near one of the bowls.
  6. Fill in with crackers and bread. Arrange the crackers and baguette slices in the remaining empty spaces. Place the crackers in a fan pattern and the baguette slices in a small stack.
  7. Drizzle and garnish. Drizzle a little honey over the brie or goat cheese. Add a sprig of fresh rosemary for color.
  8. Serve immediately. Place the board in the center of your table or coffee table. Add small plates and napkins.

Notes

Bring cheese to room temperature for best flavor. Don’t overcrowd the board; leave breathing room. Taste as you go to ensure flavor balance. Leftovers can be stored separately: cheeses in wax paper, meats in airtight container, fruits and crackers at room temperature.
