  • 1/2 cup diced red onion (optional)
  • 1 cup sour cream or Greek yogurt
  • 1/2 cup chopped fresh cilantro
  • 1 lime, cut into wedges
  • 1 cup jarred salsa or pico de gallo

Instructions

  1. Dice the onion and tomato, mince the garlic, shred the cheese, and chop the cilantro. (Approx. 10 minutes)
  2. Heat a large skillet over medium-high heat. Add the ground beef and onion. Break the meat into small crumbles and cook for 5-7 minutes until beef starts to brown and onion softens.
  3. Stir in minced garlic, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for 1-2 minutes until fragrant.
  4. Pour in beef broth or water. Reduce heat to medium-low and simmer uncovered for about 10 minutes, stirring occasionally until liquid reduces and meat absorbs spices.
  5. Warm tortillas in a dry skillet or microwave wrapped in a kitchen towel for 30 seconds to keep soft.
  6. Arrange seasoned meat, warmed tortillas, shredded cheese, lettuce, tomato, onion, sour cream, salsa, cilantro, and lime wedges for assembly.
