  • 6 tablespoons unsalted butter, melted
  • A pinch of salt
  • 1 can (15 oz) pure pumpkin purée
  • ½ cup pure maple syrup
  • ½ cup heavy cream
  • 2 large eggs, room temperature
  • 1 large egg yolk
  • 2 tablespoons bourbon
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch pie dish.
  2. In a food processor, pulse ground pecans, flour, sugar, and salt until combined. Add melted butter and pulse until the mixture resembles wet sand.
  3. Press the mixture firmly into the bottom and up the sides of the pie dish. Pre-bake for 8-10 minutes until fragrant and lightly golden. Let cool completely.
  4. In a large bowl, whisk together pumpkin purée, maple syrup, and heavy cream until smooth.
  5. Add eggs and egg yolk one at a time, whisking gently after each addition to avoid incorporating too much air.
  6. Stir in bourbon, cinnamon, ginger, nutmeg, cloves, and salt.
  7. Pour filling into the cooled crust. Place on a baking sheet and bake at 350°F (175°C) for 50-60 minutes.
  8. The pie is done when edges are set but the center jiggles slightly. Cover edges with foil if browning too quickly.
  9. Cool on a wire rack for at least 2 hours before slicing to allow the filling to firm up.

Notes

Toast pecans before grinding for deeper flavor. Use room temperature eggs to prevent curdling. Do not overmix the filling to avoid cracking. The pie tastes better the next day. Store covered in the fridge for up to 4 days or freeze for up to 2 months.
