Best Make-Ahead Cranberry Orange Sauce Recipe

This bright and tangy cranberry orange sauce is the perfect make-ahead side dish for any gathering. Made with simple ingredients, it gets better after a day or two in the fridge, making it a lifesaver during busy holiday weeks.

  • 12 ounces (340 grams) fresh or frozen cranberries (1 standard bag)
  • 1 cup (200 grams) granulated sugar
  • 1/2 cup (120 ml) fresh orange juice (from about 1 large navel orange)
  • 2 tablespoons orange zest (from that same orange)
  • 1/4 cup (60 ml) water
  • 1 cinnamon stick (optional)
  • Pinch of salt

Instructions

  1. Prepare the orange: Wash the orange thoroughly, dry it, and zest it using a microplane to get about 2 tablespoons of zest. Set the zest aside. Cut the orange in half and juice it until you have 1/2 cup of fresh juice. Pick out any seeds.
  2. Combine the base ingredients: In a medium saucepan, add the fresh orange juice, water, and granulated sugar. Drop in the cinnamon stick if using. Stir everything together.
  3. Bring to a simmer: Place the saucepan over medium-high heat. Stir occasionally until the sugar has completely dissolved, about 2 to 3 minutes. Once it reaches a gentle boil, reduce the heat to medium.
  4. Add the cranberries: Pour the entire bag of cranberries into the saucepan (frozen is fine, do not thaw). Stir gently to coat all the berries with the sugar mixture.
  5. Cook the cranberries: Let the mixture come back to a gentle simmer. Cook for about 10 to 12 minutes, stirring occasionally. After about 5 minutes, the cranberries will start to pop.
  6. Check for doneness: After 10 minutes, most cranberries should have burst. The sauce will look thin but will thicken as it cools. To test, dip a wooden spoon into the sauce and run your finger down the back. If it leaves a clean trail that doesn’t immediately fill back in, it’s done.
  7. Finish with orange zest: Remove the saucepan from the heat. Take out the cinnamon stick and discard. Stir in the reserved orange zest.
  8. Cool the sauce: Let the sauce cool in the saucepan for about 15 to 20 minutes, stirring every 5 minutes to prevent a skin from forming.
  9. Transfer to storage container: Once cooled to warm, pour into a clean glass jar or airtight container. Let it come to room temperature completely before sealing and refrigerating.

Notes

This sauce actually gets better after a day or two in the fridge. The flavors meld together into something deeper and more complex. You can make it up to a full week ahead. For a thicker sauce, cook 2-3 minutes longer; for a thinner sauce, pull off heat earlier. The sauce will continue to thicken as it cools.
