  • 2–3 lbs sweet potatoes (medium-sized, uniform)
  • 2 tbsp unsalted butter (room temperature)
  • 1 cup sharp cheddar cheese (shredded)
  • 1/2 cup smoked gouda cheese (shredded)
  • 6 slices cooked bacon (crispy, crumbled)
  • 2 stalks green onions (chopped)
  • Hot sauce (optional, to taste)
  • Salt and pepper (to taste)

Instructions

  1. Preheat oven to 400Β°F (200Β°C). Wash and dry sweet potatoes, then prick them several times with a fork to let steam escape.
  2. Bake potatoes directly on the rack or on a lined baking sheet for 45-60 minutes until soft all the way through. Let cool for 10 minutes.
  3. Slice potatoes in half lengthwise. Scoop out the flesh, leaving about 1/4 inch attached to the skin to create a sturdy boat. Place flesh in a mixing bowl.
  4. Mash the warm potato flesh with butter until smooth. Add half of the cheddar, half of the gouda, and half of the crumbled bacon. Season with salt and pepper. Mix until creamy.
  5. Spoon the mixture back into the potato skins, spreading evenly. Top with the remaining cheese and bacon.
  6. Return to the oven and bake for 10-15 minutes until cheese is bubbly and slightly browned.
  7. Remove from oven, sprinkle with chopped green onions, and serve immediately.

Notes

For a quicker prep, microwave potatoes for 5-7 minutes before baking. Ensure skins are dry before stuffing to maintain crispiness. Can be made vegetarian by swapping bacon for smoked tofu or caramelized onions. Can be made dairy-free using plant-based butter and cheese.
