  • 1/2 cup whole milk
  • 2 large eggs, room temperature
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried parsley
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup ketchup
  • 1/4 cup packed brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Line a 9×5 loaf pan with aluminum foil and grease lightly.
  2. Finely dice the onion and mince the garlic.
  3. In a large mixing bowl, combine breadcrumbs and milk. Let sit for 1 minute to create a panade.
  4. Add ground beef, ground pork, eggs, onion, garlic, Worcestershire sauce, Dijon mustard, parsley, salt, and pepper to the bowl. Mix gently with hands until just combined; do not overmix.
  5. Transfer mixture to the prepared loaf pan, pressing down firmly and smoothing the top.
  6. In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, yellow mustard, garlic powder, and smoked paprika until smooth.
  7. Bake the loaf for 45 minutes.
  8. Remove from oven and spoon the glaze evenly over the top.
  9. Return to oven and bake for another 15-20 minutes, or until internal temperature reaches 160Β°F (71Β°C).
  10. Remove from oven and let rest in the pan for at least 15 minutes before slicing.

Do not overmix the meat to avoid a tough texture. Let the meatloaf rest for 15 minutes after baking to allow juices to redistribute. If using a baking sheet instead of a pan, shape into a tight loaf and create a ridge around the edges to catch juices. Ensure internal temperature reaches 160Β°F.
