  • 6 to 8 fresh jalapenos (medium-sized, about 3 to 4 inches long)
  • 8 ounces cream cheese, softened to room temperature
  • 1 cup sharp cheddar cheese, shredded
  • 12 to 16 slices bacon (regular cut)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Pinch of salt
  • Pinch of black pepper
  • 1/2 cup sour cream (for dipping sauce, optional)
  • 1 tablespoon ranch dressing mix (or 1/4 cup prepared ranch, for dipping sauce, optional)
  • 1 tablespoon fresh chives, chopped (for garnish, optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil. If using a wire rack, place it on top of the baking sheet.
  2. Wash and dry the jalapenos. Slice off the stems, then cut each jalapeno into 1-inch thick rounds (about 4 to 5 rounds per pepper). Use a small spoon or melon baller to scoop out the seeds and white membranes from each round. Wear gloves if desired.
  3. In a small mixing bowl, combine the softened cream cheese, shredded cheddar, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  4. Using a small spoon or your fingers, fill each jalapeno round with the cream cheese mixture. Fill level with the edges of the pepper, not mounded.
  5. Cut each bacon slice in half crosswise. Wrap one half-slice around each stuffed jalapeno round, overlapping the ends slightly. Secure with a toothpick pushed through the overlap and into the jalapeno.
  6. Arrange the wrapped bites on the prepared baking sheet, leaving a little space between each one.
  7. Bake for 15 to 18 minutes. After the first 10 minutes, use tongs to flip each bite over. Bake for another 5 to 8 minutes, or until the bacon is golden brown and crispy.
  8. Remove from the oven and let the bites rest for about 5 minutes to allow the filling to set.
  9. Carefully remove the toothpicks using tongs.
  10. Serve immediately, arranged on a platter with the dipping sauce on the side. Garnish with chopped chives if desired.
