  • 8 to 10 slices thick-cut bacon
  • 1 cup sharp cheddar cheese, shredded
  • 1/4 cup red onion, finely diced
  • 1/2 cup dried cranberries or raisins
  • 1/2 cup roasted and salted sunflower seeds or chopped pecans
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil and lay bacon slices in a single layer. Bake for 15-18 minutes until crispy. Transfer to paper towels to drain and cool, then crumble.
  2. Wash broccoli and cut into bite-sized florets (about 1 to 1.5 inches). Thinly slice tender stems.
  3. Soak broccoli in ice water for 10-15 minutes to maximize crunch. Drain and dry thoroughly using a salad spinner or clean kitchen towel.
  4. Shred cheddar cheese using a box grater.
  5. In a small bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth. Adjust seasoning to taste.
  6. In a large mixing bowl, combine broccoli, crumbled bacon (reserve some for garnish), shredded cheddar, red onion, dried cranberries, and sunflower seeds. Toss gently.
  7. Pour dressing over the mixture and fold until evenly coated. Avoid overmixing.
  8. Cover and refrigerate for at least 1 hour, preferably 2-3 hours, to let flavors meld.
  9. Before serving, stir again and adjust seasoning if needed. If dry, add a tablespoon or two more mayonnaise.
  10. Transfer to a serving bowl, garnish with reserved bacon bits, and serve cold or at room temperature.

Notes

For best results, dry broccoli thoroughly after the ice water bath to prevent watery dressing. The salad tastes even better the next day. If using pre-shredded cheese, note it may not blend as smoothly.
