Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper.
  2. In a medium saucepan, melt ¾ cup of butter over medium heat. Swirl occasionally until milk solids turn golden brown and smell nutty (5-7 minutes). Remove from heat and let cool slightly.
  3. In a large bowl, whisk the cooled brown butter, granulated sugar, and brown sugar until combined. Whisk in eggs one at a time, then add vanilla.
  4. Add mashed bananas to the wet mixture and stir gently. In a separate bowl, whisk flour, baking soda, salt, and cinnamon. Sift dry ingredients into wet mixture and fold gently until just combined. Do not overmix.
  5. Pour batter into the prepared pan. Bake for 55-65 minutes, tenting with foil if top browns too quickly. Test with a toothpick; it should come out clean or with moist crumbs.
