  • 1 lb Whole Wheel of Brie
  • 1 cup Dried Cranberries
  • 1 cup Walnuts or Pecans (toasted)
  • 8 oz Prosciutto
  • 8 oz Soppressata or Salami
  • 2 boxes Crackers (mix of water, honey, or walnut)
  • 4 oz Quince Paste (Membrillo)
  • 1/4 cup Honey
  • 1 cup Green Grapes

Instructions

  1. Place the wheel of brie in the center of a large wooden or marble board. Let it sit for 10-15 minutes to soften slightly if cold.
  2. Fold prosciutto and soppressata loosely into ruffles or rolls. Arrange them around the brie in a ring, overlapping slightly to create a dense ‘meat ribbon’ border.
  3. Tuck dried cranberries and toasted nuts into the gaps between the meats or place them on the outer edge of the wreath.
  4. Inside the meat ring, place the quince paste and small bowls for dips. Outside the meat ring, arrange grapes, crackers (upright or angled), and any additional fruits.
  5. Drizzle honey over the brie and meats. Add fresh herbs like rosemary or thyme for garnish. Adjust items to ensure a full, abundant look.

Notes

Serve brie and meats at room temperature for best flavor. Assemble up to 2 hours ahead and keep covered in the fridge, bringing to room temperature before serving. Do not freeze the brie. For a gluten-free version, use gluten-free crackers. For a dairy-free version, use vegan brie alternatives.
