A rich, moist banana bread made with toasted brown butter and crunchy walnuts, offering a complex, nutty flavor that elevates the classic loaf.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter
  • 3 large ripe bananas, mashed
  • 1 Β½ cups all-purpose flour
  • ΒΎ cup granulated sugar
  • Β½ cup brown sugar
  • 2 large eggs, room temperature
  • 1 cup chopped walnuts
  • 1 teaspoon baking soda
  • Β½ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Grease a 9×5 inch loaf pan and line the bottom with parchment paper.
  2. Melt butter in a light-colored saucepan over medium heat. Stir constantly until it foams, subsides, and turns amber with golden brown specks and a nutty aroma (5-7 minutes).
  3. Immediately pour browned butter into a heat-safe bowl and let cool for 10 minutes.
  4. In a large bowl, mash bananas and mix in granulated and brown sugars.
  5. Add the cooled brown butter to the banana mixture. Beat in eggs one at a time and stir in vanilla extract.
  6. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  7. Gently fold dry ingredients into wet ingredients until just combined. Do not overmix.
  8. Fold in chopped walnuts.
  9. Pour batter into prepared loaf pan.
  10. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean or with moist crumbs.
  11. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use a light-colored saucepan to monitor butter browning. Toast walnuts for extra flavor. Do not overmix the batter to avoid dense bread. If the top browns too quickly, cover with foil after 30 minutes. Best served on day two.
