These bacon-wrapped smokies with brown sugar glaze are sticky, salty, sweet, and completely irresistible. Perfect for parties, they combine crispy bacon, juicy sausage, and caramelized brown sugar in one perfect bite.

  • 14 oz little smoked sausages (about 3035 sausages)
  • 1 lb thin-cut bacon
  • 1 cup brown sugar, packed
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 tablespoon Dijon mustard (optional)

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Line a baking sheet with aluminum foil and place a wire rack on top if using.
  2. Cut each strip of bacon into thirds, about 2-3 inches long.
  3. Wrap each little smoked sausage with a piece of bacon, overlapping the ends slightly. Secure with a toothpick pushed through the overlap.
  4. Pour the brown sugar into a small bowl. If adding cayenne or Dijon mustard, mix it in now. Break up any clumps with your fingers.
  5. Roll each bacon-wrapped sausage in the brown sugar, pressing gently so the sugar sticks. Place seam side down on the wire rack or foil-lined baking sheet.
  6. Bake for 35-45 minutes, until bacon is crispy and sugar is bubbly and caramelized. Check at 30 minutes to prevent burning.
  7. Let them rest for 5 minutes before serving to allow the glaze to set.
  8. Transfer to a serving platter using tongs. Optionally sprinkle with flaky sea salt before serving.

Notes

Use thin-cut bacon for best results. Don’t crowd the pan to ensure even crisping. Soak toothpicks in water for 10 minutes if worried about burning. For a spicier version, add 1/2 teaspoon cayenne and a pinch of smoked paprika. For a maple Dijon glaze, brush with a mixture of 1/4 cup maple syrup and 2 tablespoons Dijon mustard instead of rolling in brown sugar. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 300Β°F for 10 minutes to restore crispness.
