  • 1 cup (240 ml) soda water (plain or lightly carbonated sparkling water)
  • 2 tablespoons (30 ml) fresh lime juice
  • 1 tablespoon (15 ml) simple syrup (equal parts sugar and water, dissolved)
  • 68 fresh mint leaves (optional)
  • Lime slices for garnish
  • Ice cubes

Instructions

  1. Make the simple syrup by combining Β½ cup (100 g) sugar and Β½ cup (120 ml) water in a small saucepan. Heat over medium heat, stirring until sugar dissolves completely. Cool before using.
  2. Juice the limes to get 2 tablespoons (30 ml) of fresh lime juice, catching any seeds.
  3. Fill a wine glass with plenty of ice cubes.
  4. Pour Β½ cup (120 ml) of dry white wine over the ice gently.
  5. Add 2 tablespoons lime juice and 1 tablespoon (15 ml) simple syrup to the glass. Stir gently to combine without flattening the bubbles.
  6. Slowly pour Β½ cup (120 ml) soda water to fill the glass, adding fizz.
  7. Garnish with a few fresh mint leaves and a thin slice of lime on the rim or inside the glass.
  8. Serve immediately while bubbles are lively and flavors vibrant.

Use well-chilled wine and soda water to keep the spritzer crisp. Stir gently to preserve bubbles. Large ice cubes melt slower and dilute less. Fresh lime juice and mint leaves are key for brightness and aroma. Simple syrup can be made ahead and stored in the fridge for up to a month.
