  • 3/4 cup (150g) granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 4 tablespoons (60g) unsalted butter, softened
  • 1 large egg, room temperature
  • 1/3 cup (80ml) whole milk, room temperature
  • 2 tablespoons sour cream
  • 1 teaspoon pure vanilla extract
  • For the Frosting:
  • 4 tablespoons (60g) unsalted butter, softened
  • 1 cup (120g) powdered sugar, sifted
  • 1 tablespoon (15ml) heavy cream or milk
  • 1/2 teaspoon pure vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Grease two 6-inch cake pans and line the bottoms with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and salt until combined.
  3. Using a mixer, beat the softened butter and granulated sugar on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in the egg and vanilla extract until fully incorporated.
  5. In three parts, alternately add the flour mixture and the milk mixed with sour cream to the butter mixture, starting and ending with flour. Fold gently after each addition.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 25-30 minutes, checking doneness with a toothpick which should come out clean or with a few moist crumbs.
  8. Let the cakes cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
  9. To make the frosting, beat the softened butter until creamy. Gradually add powdered sugar, then beat in cream, vanilla, and salt. Adjust consistency as needed.
  10. Place one cake layer on a serving plate, spread a generous layer of frosting, then top with the second cake layer.
  11. Cover the top and sides with remaining frosting, using a spatula to create gentle swirls.

Notes

Use room temperature ingredients for best results. Do not overmix the batter to keep the cake tender. Rotate pans halfway through baking if your oven has hot spots. Chill frosting if too soft before applying. For a neater finish, apply a crumb coat and chill before final frosting.
