  • 4 pounds Yukon Gold potatoes, washed and cut into 1-inch chunks
  • ⅓ cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried rosemary, crushed
  • Salt and pepper to taste
  • 2 tablespoons honey or maple syrup (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut 4 pounds of Yukon Gold potatoes into 1-inch pieces. Toss them in a large bowl with ⅓ cup olive oil, 1 teaspoon garlic powder, 1 teaspoon smoked paprika, 1 teaspoon crushed dried rosemary, and salt and pepper to taste. Ensure every piece is coated well.
  3. Place the 6-7 pound pre-cooked bone-in ham in the center of a large sheet pan. Score the rind lightly in a diamond pattern if present.
  4. Spread the seasoned potatoes evenly around the ham in a single layer.
  5. Roast in the oven for about 60 minutes. At the 30-minute mark, stir the potatoes gently to turn them for even browning.
  6. After 45 minutes, brush the ham surface with 2 tablespoons of honey or maple syrup. Return to the oven for the final 15 minutes.
  7. Check that the potatoes are golden and crispy and the ham is warmed through with a sticky, browned glaze. Broil for 2-3 minutes if more crisp is desired, watching carefully to avoid burning.
  8. Let the ham rest for 10 minutes before slicing. Serve with the crispy potatoes.
