A quick and flavorful Mediterranean chicken recipe featuring a bright lemon and za’atar marinade that delivers juicy, aromatic results perfect for weeknight dinners or casual gatherings.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 700 g)
  • 3 tablespoons za’atar spice blend
  • 1/4 cup fresh lemon juice (about 12 lemons)
  • 2 tablespoons lemon zest
  • 3 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon chopped fresh parsley (optional garnish)
  • 1 tablespoon chopped fresh oregano or thyme (optional)

Instructions

  1. In a large bowl, combine za’atar, lemon juice, lemon zest, olive oil, minced garlic, salt, and black pepper. Whisk until fully blended.
  2. Add chicken breasts to the bowl and turn to coat evenly in the marinade. Cover and refrigerate for at least 30 minutes, ideally up to 2 hours.
  3. Heat a cast iron skillet or heavy-bottomed pan over medium-high heat for 3-5 minutes until hot.
  4. Remove chicken from marinade, letting excess drip off. Place breasts in the pan and cook for 6-7 minutes on the first side without moving until golden brown.
  5. Flip chicken using tongs and cook for another 5-7 minutes until cooked through (internal temperature 165°F / 74°C).
  6. Transfer chicken to a plate, cover loosely with foil, and let rest for 5 minutes.
  7. Garnish with chopped fresh parsley and oregano or thyme. Serve warm.

Notes

Resting the chicken after cooking locks in moisture for juicier meat. Use tongs to flip chicken to avoid piercing and losing juices. If chicken browns too fast, lower heat and cover pan briefly. Marinate at least 30 minutes; overnight marinating intensifies flavor. Adjust cooking time if using chicken thighs.
