  • 2 tablespoons (30 ml) apple cider vinegar (optional but recommended)
  • 1/4 teaspoon ground cloves
  • 1/4 cup (60 ml) water

Instructions

  1. Preheat your oven to 325Β°F (163Β°C).
  2. In a mixing bowl, combine brown sugar, honey, Dijon mustard, apple cider vinegar, ground cloves, and water. Whisk until smooth and glossy.
  3. Place a fully cooked ham (6-8 pounds) in a roasting pan and score the surface in a diamond pattern about 1/8 inch deep.
  4. Using a basting brush, spread a generous layer of the glaze all over the ham, making sure to get into the scored lines.
  5. Bake the ham uncovered, brushing on more glaze every 15-20 minutes for about 1 to 1 ΒΌ hours to build a sticky, caramelized crust.
  6. If the glaze starts to darken too quickly, tent the ham loosely with foil to prevent burning.
  7. Check the internal temperature with a meat thermometer; it should reach about 140Β°F (60Β°C) for safe serving.
  8. Remove the ham from the oven and let it rest for 10-15 minutes before slicing.

Do not rush the basting process; regular brushing creates the signature sticky-sweet finish. Score the ham surface about 1/8 inch deep to help glaze penetration but avoid cutting too deep.
