Instructions

  1. Boil pasta (8-10 minutes): Fill a medium pot with about 2 liters (8 cups) of water and add a pinch of salt. When boiling, add pasta and cook according to package instructions until al dente, usually 8-10 minutes. Prepare the sauce while pasta cooks.
  2. Prepare the sauce (5-6 minutes): Heat olive oil in a medium skillet over medium heat. Add chopped garlic and sauté for 30 seconds until fragrant but not burnt.
  3. Add tomatoes and spices: Stir in crushed tomatoes and oregano. Season with salt and pepper. Let sauce simmer gently and thicken for 4-5 minutes. Add a pinch of sugar if sauce is too acidic.
  4. Drain and mix: Drain pasta well and immediately mix with the sauce in the skillet. Stir to coat each strand evenly.
  5. Final touches: Add fresh basil leaves just before serving to preserve aroma. Sprinkle with grated cheese and red pepper flakes if desired.

Notes

Do not burn the garlic to avoid bitterness. Use enough water to prevent pasta sticking. Adjust seasoning after mixing pasta and sauce. Sauce can be made ahead and reheated. For creamier sauce, add cream cheese. Pasta can be substituted with gluten-free or whole grain options. Avoid rinsing pasta after draining to help sauce adhere better.
