  • 1 Β½ cups graham cracker crumbs (about 150g)
  • 6 tbsp unsalted butter, melted (85g)
  • 2 tbsp granulated sugar (for crust)
  • 16 oz (450g) cream cheese, softened
  • ΒΎ cup granulated sugar (150g) (for filling)
  • 2 large eggs, room temperature
  • Β½ cup sour cream (120ml)
  • 1 tsp vanilla extract
  • 2 tbsp ube powder
  • 1 tbsp butterfly pea flower tea concentrate or butterfly pea extract
  • 2 tbsp water
  • 1 tbsp sugar (optional, for swirl)

Instructions

  1. Preheat your oven to 325Β°F (160Β°C). Grease an 8×8 inch pan and line it with parchment paper, leaving some overhang for easy lifting.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tbsp sugar. Mix until crumbs are evenly coated and feel like damp sand.
  3. Press the crust firmly into the bottom of the prepared pan, evenly spreading and packing tight. Bake the crust for 10 minutes, then let it cool.
  4. In a large bowl, beat softened cream cheese with ΒΎ cup sugar until creamy and smooth. Add eggs one at a time, mixing well after each addition.
  5. Mix in sour cream, vanilla extract, and ube powder until fully incorporated and batter is a lovely purple hue.
  6. In a small bowl, whisk together butterfly pea concentrate, water, and 1 tbsp sugar until smooth and vivid blue.
  7. Pour the cheesecake filling over the cooled crust. Spoon the butterfly pea mixture over the top in dollops.
  8. Use a toothpick or skewer to gently swirl the blue into the purple batter to create a galaxy effect. Avoid over-swirl to prevent muddy colors.
  9. Bake the cheesecake bars for 40-45 minutes until edges are set but center has a slight wobble.
  10. Turn off the oven and leave the bars inside with the door slightly ajar for 30 minutes to prevent cracks.
  11. Remove from oven and cool completely at room temperature for about 1 hour. Refrigerate for at least 4 hours or overnight to fully set.
  12. Slice into bars using a sharp knife wiped clean between cuts. Serve chilled.

Soften cream cheese at room temperature for at least 30 minutes to avoid lumps. Add eggs one at a time on low speed to prevent cracks. Swirl butterfly pea mixture gently to avoid muddy colors.
