Ingredients

  • Dark chocolate (70% cocoa or higher), chopped (about 4 oz)
  • Unsalted butter, softened (113g / 1/2 cup)
  • Granulated sugar (100g / 1/2 cup)
  • Large eggs (2), room temperature
  • All-purpose flour (65g / 1/2 cup), sifted
  • Cocoa powder (15g / 2 tbsp), unsweetened
  • Espresso powder (1 tsp)
  • Vanilla extract (1 tsp)
  • Salt (a pinch)
  • Edible flowers (a small handful, such as violets, pansies, or nasturtiums), pesticide-free

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 6-inch cake pan(s) with butter and dust lightly with cocoa powder to prevent sticking. This takes about 10 minutes.
  2. Melt the dark chocolate and butter together using a double boiler or microwave in 30-second bursts, stirring between each, until smooth. Set aside to cool slightly (about 5 minutes).
  3. In a mixing bowl, cream the softened butter and sugar. Beat with an electric mixer on medium speed for 3-4 minutes until fluffy and pale.
  4. Add eggs one at a time, beating well after each addition. The mixture might look slightly curdled—don’t worry, it will come together once the chocolate is folded in.
  5. Mix in the vanilla extract and espresso powder, stirring gently but thoroughly.
  6. Sift together the flour, cocoa powder, and salt. Gradually fold into the wet mixture using a spatula, being careful not to overmix. The batter should be thick but smooth.
  7. Fold the melted chocolate and butter mixture into the batter until fully incorporated; the batter will be glossy and rich.
  8. Pour the batter into the prepared pan(s). Smooth the top with your spatula and tap the pan gently on the counter to release air bubbles.
  9. Bake for 25-30 minutes. Insert a toothpick into the center around the 25-minute mark; it should come out with moist crumbs but not wet batter. Bake longer if needed, but watch closely to avoid drying out.
  10. Cool the cake on a wire rack for at least 15 minutes before removing from the pan.
  11. Once cooled, decorate with edible flowers arranged gently on top. Optionally, lightly dust with powdered sugar.

Notes

Use room temperature eggs and butter for better blending. Chop chocolate finely to melt evenly. Don’t overmix after adding flour to keep the cake tender. Watch oven closely to avoid overbaking. Cool completely before decorating to prevent edible flowers from wilting. Espresso powder is optional but enhances chocolate flavor. For gluten-free, substitute almond flour; for dairy-free, use coconut oil and dairy-free chocolate.
