  • 1/2 teaspoon vanilla extract
  • 1/4 cup (30 g) all-purpose flour (or almond flour for gluten-free)
  • A pinch of salt

Instructions

  1. Preheat oven to 425Β°F (220Β°C). Generously butter the ramekins and dust lightly with cocoa powder, tapping out excess.
  2. Melt chocolate and butter together in a heatproof bowl over simmering water or microwave in short bursts, stirring until smooth. Let cool slightly.
  3. Whisk powdered sugar, eggs, egg yolks, and vanilla extract in a separate bowl until pale and slightly thickened, about 2-3 minutes.
  4. Slowly pour melted chocolate mixture into the egg mixture, whisking continuously to combine without cooking the eggs.
  5. Gently fold in sifted flour and salt using a spatula until no streaks remain; avoid overmixing.
  6. Divide batter evenly between prepared ramekins (about 3/4 full). Tap ramekins lightly to release air bubbles.
  7. Bake for 12-14 minutes, watching closely after 11 minutes. Edges should be set and slightly firm; center should be soft and jiggly.
  8. Remove from oven and let cool 1-2 minutes. Run a knife around edges to loosen, then invert onto dessert plates.
  9. Serve immediately with vanilla ice cream or fresh berries.
